This model functions as a chef’s knife with an extra-tall blade and an aggressive tip. This makes it ideal for slicing and chopping even larger ingredients.

Hatsukokoro Ginrei offers excellent value for money, with a fine finish and a thin, refined edge. The core steel is Gingami #3, a high-quality stainless steel hardened to 61 HRC. The core is clad in two layers of stainless steel with a coarse nashiji finish. The octagonal handle is made from bubinga.
