Kiritsuke with an impressive 264 mm long blade made from SG2 stainless powder steel (62-63 HRC), a true premium steel.

The knife is entirely handmade by Hanake-san, a true master. The blade features a spectacular Damascus design that has been polished to a mirror shine. The grinding is incredibly meticulous and employs the technically complex Hamaguri grind. This means that the hand-forged blade has a convex grind, providing unparalleled cutting ability, despite the blade having a relatively robust edge.

The handle is octagonal and made of bocote with a bolster of light buffalo horn.

Rinse the blade especially thoroughly after contact with salty foods.

Stainless steel is highly resistant to corrosion, but it is not completely rust-proof. Salt and moisture left on the blade can, over time, cause small rust spots or pitting.
