Ohishi VG-5 has all the qualities you look for in a stainless professional knife: perfect balance, a well-judged weight and a truly sharp blade. A very affordable knife with excellent edge retention. The blade consists of three layers of steel with VG-5 at the core. The handle is made of pakkawood with an integral bolster and stainless-steel rivets.

Clean the knife after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Rinse the blade especially thoroughly after contact with salty foods.

Leaving salt or moisture on the blade for extended periods.
