Santoku

Santoku with a 180 mm blade

Taguchi is a young bladesmith from Takefu Knife Village who recently began working under his own name after several years with Yoshimi Kato. This is one of the very first knives to leave his own forge, and we are proud to present his knives outside Japan.

The knife has a 180 mm blade with a core of stainless Gingami #3 steel (Ginsan). This steel combines excellent sharpness, good wear resistance and easy maintenance. The geometry is thin behind the edge, with impressive tapering from the heel all the way to the tip. This gives the knife a light, responsive feel in the hand and exceptional precision.

The blade has multiple layers of steel that add visual depth, while the finish is brushed and relatively understated.
