Sujihiki | Custom Handle

Sujihiki slicing knife with a 270 mm blade, hand-forged from SG-2 powder steel.

This particular knife has a custom handle, made entirely by hand from thermowood with a stabilized green birch-burl bolster. It is octagonal and the knife balances beautifully in the hand.

Shigeki Tanaka is the bladesmith who makes these fantastic knives, which are as beautiful as they are sharp. The blade has an SG-2 powder-steel core that provides an exceptionally sharp, durable edge at a hardness of 62–63 HRC. The core is surrounded by 32 layers of steel that create a remarkably beautiful pattern.
