Santoku with a 176 mm blade.

This knife is part of an upcoming project with Shiro Kamo. It features a core of hard SG-2 powder steel and a coarse brushed finish on the blade sides. This is the very first knife in the series, and so far, only one example exists, this one.

The handle is made from stabilized maple.

Clean the knife after use.
Wash by hand using the soft side of a dish sponge and a little dishwashing liquid.
Rinse the blade especially thoroughly after contact with salty foods.

Dishwashers.
Leaving the knife in water.
Leaving salt or moisture on the blade for extended periods.

Stainless steel is highly resistant to corrosion, but it is not completely rust-proof. Salt and moisture left on the blade can, over time, cause small rust spots or pitting.
